(Note: This entry does not contain any sort of special recipe for pancakes. Daddy’s Famous Flapjacks were made with the recipe on the back of the box of Heart Smart Bisquick!)
Two nights ago, Tom and I were having the usual “What do you want for dinner?” discussion. Neither of us knew what we wanted, so I thought I’d ask TJ. Usually, this results in some predictable answers: ice cream or chocolate cake, which he can’t have for dinner, or something like pizza or chicken, which he then decides not to eat. This time, it was different.
TJ said, “Daddy’s famous flapjacks.”
I asked him to repeat himself. He did. Tom and I looked at each other in disbelief. In our house, we call them pancakes.
Just to double check, I asked TJ if he wanted to eat pancakes for dinner. He nodded and said, “Uh huh!”
Earlier in the evening, we had been watching Little Bear on Noggin, and Father Bear made his Famous Flying Flapjacks. I wondered if the inspiration for TJ’s dinner choice was going to be enough to get him to eat. It can be frustrating to try feeding him!
When the pancakes were done, TJ decided that we should eat them at a picnic. So we spread a blanket out on the living room floor, and the three of us enjoyed our pancakes together at a little carpet picnic. TJ ate two of them!
Daddy’s famous flapjacks were a hit!
