The following is an excerpt from my upcoming eBook, The Picky Eater’s Cookbook. Living in New York State, apple season is a wonderful time of year that makes autumn the official start of baking season. One of my favorite apple recipes is apple bread. I will fully admit to eating half a loaf in one sitting, and sending the other half to work with my husband so I can’t eat the whole thing at once.
Ingredients
- 1 cup sugar
- 1/2 cup shortening (I use Crisco baking sticks)
- 2 eggs
- 2 medium-large apples, peeled and chopped
- 2 cups white whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla
- 1 tsp ground cinnamon
Directions
Preheat oven to 350. In a large bowl, cream together sugar, shortenening, and eggs. Mix in apples. Add the rest of the ingredients gradually, stirring as you go. If the mixture is not wet enough, you can add more chopped apples.
Place bread dough in metal loaf pan that has been sprayed with non-stick cooking spray. Sprinkle ground cinnamon on top, if desired. Bake in the oven at 350 for one hour. Allow to cool for 30 minutes before slicing.
