We enjoyed our free Cook’s Ham on Easter, and despite the fact that the 10-pound beast fed nine people at my parents’ house, I was able to bring home a hefty amount of leftovers. Now it’s time to make all of those recipes I came up with at the conference for using my leftover Cook’s spiral sliced honey ham! I asked Tom how he makes omelets, and he said there’s an easy way and a hard way. I’m going to tell you both.

Ham and Cheese Omelet Ingredients

  • Leftover ham, diced
  • 2-3 large eggs per person
  • Colby Jack cheese, shredded
  • Milk
  • Butter or margarine
  • Other fillings, as desired (onion, green pepper, etc.)

Ham and Cheese Omelet Microwave Directions

  1. Crack open two or three eggs into a small bowl or liquid measuring cup. Add a small amount of milk and beat together.
  2. Spray a glass pie plate with nonstick cooking spray. Pour the egg mixture into the pie plate.
  3. Place the pie plate into the microwave. Cook on high until the egg has mostly formed together, about three minutes. The eggs will puff up while cooking. When the middle looks solid, it’s done.
  4. Slide the egg off the pie plate and onto a heated, buttered griddle for one minute.
  5. Flip the egg over and add the cheese, ham, and any other desired fillings.
  6. When the cheese has melted, fold the omelet in half and serve.

Ham and Cheese Omelet Skillet Directions

  1. Crack open two or three eggs into a small bowl or liquid measuring cup. Add a small amount of milk and beat together.
  2. Melt a small amount of butter or margarine in a heated skillet to grease the pan.
  3. Pour the eggs into the skillet, taking care not to agitate the eggs, or you’ll end up with scrambled eggs.
  4. Once the bottom has started to solidify, carefully lift one side of the cooked egg with a spatula and tilt the skillet to allow more of the liquid egg  to run underneath. Repeat on the opposite side.
  5. When most of the liquid seems to have cooked, it’s time to flip. This is the hard part. Be very careful flipping it over, or it may break.
  6. After flipping the omelet, add the cheese, ham, and any other desired fillings.
  7. When the cheese has melted, fold the omelet in half and serve.

We enjoy our omelets served with home fries and maybe some toast. Also good with milk and orange juice to drink. (We’re having these for dinner tonight!)

Oh, and by the way… The Merriam-Webster Dictionary lists omelet as the proper spelling of the word, although omelette is listed as a variant. Omelette is actually French, and it is not recognized by the  spell check dictionaries on my computer. When I see it spelled that way, I want to pronounce it om-LET instead of OM-let. Let’s stick with omelet, okay? 🙂
