TJ’s been getting pickier and pickier about what he’ll eat at any given meal. He’ll turn up his nose (and flip over his bowl) at anything that isn’t macaroni and cheese for four days straight, and then on the fifth day, he won’t touch the stuff. He gets his fruits in most every day, but veggies are trickier. He doesn’t usually want to eat his vegetables.
Thankfully, he does love potatoes, like his mommy does. 🙂 He’ll eat mashed potatoes any time, and he’s been known to polish off an entire baked potato by himself. My mom never counted potatoes as vegetables for me, since they counted as starches for my brother’s diabetic diet. But I think I’ll count them as vegetables for TJ – as long as they aren’t fried. French fries only half-count as vegetables.
Shredded carrots are hit and miss. He can sit an devour handful after handful, or he can decorate the floor surrounding his high chair with them. He likes corn, but he’s more likely to eat it if I mix it in with his mashed potatoes.
This all leads me to an important question: since pickles are made from cucumbers, do pickles count as a vegetable? TJ loves them, so it would be a load off of my guilty mommy conscience to accept pickles as a serving of vegetables! Please leave comments to discuss!

I don’t think pickles count either cos of the vinegar. Altho doing a search for whether pickles count turns up nothing, so i can only assume they don’t.
